SouthWestern-Style Black Bean Salad

Ingredients
- 15-ounce can black beans, rinsed and drained.
- 8 ounces can red kidney beans, rinsed and drained.
- 8-ounce can whole kernel corn, drained.
- 1/2 cup chopped green pepper
- 1/4 cup red onion
- 1/4 cup salad oil
- 1/4 cup vinegar
- 2 tablespoons lime juice
- 1 tablespoon sugar
- 1 teaspoon chili powder
- 1 teaspoon ground cumin
- 1/4 teaspoon salt
- 1 clove garlic
- Mincedshredded salad leafs
- Tortilla Chips (optional)
METHOD
- In a large mixing bowl combine black beans, kidney beans, corn , green pepper, and onion.
- For dressing, in a screw-top jar combine oil, vinegar , lime juice, sugar, chili powder, cumin, salt and garlic. Cover and shake well.
- Pour dressing over the beans mixture.
- Toss lightly to coat. Cover and chill for 4 to 24 hours, stirring occasionally.
- To Serve, Line bean salad with salad leafs.
- Serve with Tortilla Chips (optional)
POTATO SALAD

INGREDIENTS
Potato boiled 4
Green onion leaves 3
Cucumber 1
Chicken boiled 1 cup (optional)
Vinegar 1 tbsp
Worcester sauce 1 tbsp
Sugar ½ tsp
White pepper ½ tsp
Mayonnaise 3-4 tbsp
METHOD
Cut all the vegetables in square shape.
Put vegetables in a bowl and mix salt, sugar, vinegar, Worcester sauce, white pepper, chicken and mayonnaise in it.
Put it in refrigerator for ½ an hour.
Serve it in a glass bowl.
LEMON CHICKEN SALAD

INGREDIENTS
Chicken cut in cubes 100 gm
Cucumber sliced 50 gm
Radish 40 gm in cubes
Potato with skin in cubes 4-5 (only boiled)
Salt to taste
Pepper to taste
Mayonnaise 3 tbsp
METHOD
Put chicken in a sauce pan, add lemon juice, salt, pepper and cook till chickeen is tender.
Mix all other ingredients with chicken and mayonnaise also.
Serve with fried potatoes, bringal, spinach.
MAYONNAISE RECIPE

INGREDIENTS
Egg 1
Salt 1/4 tsp
White pepper powder 1/4 tsp
Mustard powder 1/4 tsp
Sugar powder 1/4 tsp
Vinegar 3 tsp
Lemon juice 1 tsp
Oil 1 cup
METHOD
Mix egg, salt, white pepper and mustard powder in a blender well.Then add sugar and vinegar in it and mix well,till it becomes a paste.Now add oil in it(add 1 tbsp at a time)blend well.By this method continue to add the oil until it is used up.Add seasonings to taste. Store covered in the refrigerator.
MANGO SALSA

INGREDIENTS
· Mango 2 large
· Papaya 1 large
· Red onion 1 medium
· Red bell pepper 1 medium
· Cucumber 1 small
· Jalapeno pepper chopped 1 medium
· Coriander leaves finally chopped 1 bunch
· Olive oil 3 tbsp
· Lime juice 6 tbsp
· Cumin powder 1 tsp
· Salt and sugar- pinch
METHOD
Peel and clean the fruits, cut all the fruits into small equal size dices. Add jalapeno and coriander leaves. Mix thoroughly. Add the lime juice and olive oil. Mix cumin, salt and sugar. Serve chilled.
