INGREDIENTS
Mince beef 125 gm
Manda strips s required
Onion 1
Green coriander leaves as required
Green chillies paste 1 tsp
Turmeric powder 1/4 tsp
Crushed red chillies 1/2 tsp
Corriander n cumin seed coarsed crushed 1/2 tsp
Salt to taste
Refined flour 1/2 cup
Ginger garlic paste 1 tsp
Oil 2 tbsp
Oil for frying

METHOD
Put oil in a frying pan,add ginger garlic paste and fry it.
Now add green chillies paste.
Add mince and cook ,till all the water dries up.
Now remove it from stove and leave to cool.
Cut onion into small peices ,like that for an omellet.
Add red chillies,onion,corriander and cummin powder, green coriander, and salt in it.
Fill the manda strips with mince and and shape them like samosa.
Seal the ends with lai (flour and water paste).
Heat oil in a wok and fry the samosas till they turn golden.
Take them out on paper.
Serve hot with green chutney and ketchup.

INGREDIENTS
Flour 3 cup
Egg 1
Yeast 1 tbsp
Salt 1 pinch
Sugar 1 tbsp
Luke warm water as required
Chicken mince 1 cup
Ginger garlic paste 1 tsp
Black pepper 1 tsp
White pepper 1 tsp
Soy sauce 2 tbsp

METHOD

Prepare dough by adding yeast, salt, sugar, egg, and oil in flour


Knead with water to form soft dough.

Steam chicken mince with ginger garlic, salt, black and white pepper. When water dries, add soy sauce and allow it to cool.

When dough rises, make equal sized balls, hollow them, and fill a heaped table spoon of mince in them.

Roll evenly and deep fry on medium heat in hot oil.

WEEDDING FRIED DRUM STICKS

INGREDIENTS


Chicken drum sticks 1 kg


ginger garlic paste 2 tbsp


curry powder 2 tbsp


salt to taste


chilli to taste


garam masala 1 tsp


cumin 1 tsp


yougurt 1/2 cup


green chillies (paste) 1 tsp


brown onion paste 1 tbsp


bread crumbs as required


Egg 2


oil for frying


METHOD


Marinate chicken drum stick with all the ingredients except egg and bread crumb.


Leave it for 1 hour.


Whisk the eggs.


First cover the drum sticks with bread crumbs one by one then dip in eggs.


Heat up the oil in a frying pan.


Put drum sticks in it and fry until brown.


Serve it with fries and ketchup.

INGREDIENTS


12 slices bread (whole wheat)

1 cup cottage cheese (plain, cut in cubes)

1/2 cup tomato (finely chopped)

1/4 cup capsicum (green, finely chopped)

1/4 cup baby sweet corn(canned, drained)

1 teaspoon lime juice (fresh)

2 tablespoons cottage cheese (plain grated)

1 tablespoon MILK

Salt and pepper (to taste)

PREPARATION


1.Remove the crusts from the bread slices.
2.Mix all the ingredients. Spread the mixture on the bread slice.
3.Cover with another bread slice.
4.Repeat the procedure with the other slices of bread. Cut into desired shape.
5.Serve with chutney or tomato sauce
.

INGRDIENTS


2 packets Noodles (chicken)

2 teaspoons MILK

50 gramscheddar cheese (grated)

1 egg (beaten)

1 teaspoon mustard

3 teaspoons plain flour

1/2 teaspoon black pepper (ground)

1 teaspoon baking powder

1 teaspoon soy sauce

1 clove garlic (crushed)

12 white bread slices

1 cup canola oil (for frying)

METHOD

1 Combine MILK, Noodles, cheese, egg, mustard, plain flour, black pepper powder, baking powder, soy sauce and garlic in a bowl.

2 Remove the crust of bread slices and cut each slice into four triangular pieces.

3 Spread cheese mixture onto the bread pieces.


4 Heat oil in the frying pan.

5 Fry bread pieces till golden-brown.

6 Serve hot

MAKAI KE PAKORA (CORN PAKORA)

INGREDIENTS


· SWEET CORN COBS 6
· GRAM FLOUR 2-3 TBSP
· SUGAR 1 TSP
· Turmeric ¼ tsp
· Yogurt 2 tbsp
· Chopped coriander 1 tbsp
· Green chilies 4
· Piece of green ginger 1 cm chopped
· Salt
· Oil for frying


Method
Grate the corn into a sieve and leave to drain. Meanwhile, put gram flour and all other ingredients in a bowl. Add the corn and mix well. If mixture is too wet, add 1 tbsp flour. Put oil to a depth of 5cm into a deep fryer and heat until hot. Shape the mixture into small balls and fry them, until light brown. Drain on kitchen paper and serve hot.

Ingredients


· 1 cup white flour
· 1 cup whole wheat flour
· Clarified butter (Ghee) for frying
· 1 Onion, finely chopped
· 1 Tablespoon ginger, very finely chopped
· 1 Cup ground meat
· 2 Tablespoon peas
· 1 Teaspoon freshly ground coriander powder
· 1 teaspoon freshly ground cumin
· 1 teaspoon Garam Masala
· 1 Tablespoon fresh Cilantro, chopped
· 1 large potato, boiled, peeled and mashed
· 2 teaspoon lemon juice
· Salt to taste
Method


Sieve the flour with a pinch of salt. Work in 2 Tablespoon of the butter, then add enough water (about 3 Tablespoon) to make smooth dough. Knead for a few minutes, cover with a damp cloth and set aside. Fry the onions in 2 Tablespoon butter. Next, stir in the ginger, ground meat, peas, spices, and salt to taste. Fry for two minutes. Add the potato and lemon juice, and fry for a few minutes more. Cool this mixture. Meanwhile, knead the dough again, divide it into small balls, and roll each one out until it is quite thin. Cut the pieces in half and lay one part on top of the other. Presses lightly, and then roll the pieces into very thin semicircles. Put a portion of the filling on one half of each pastry piece, moisten the edges with water, and fold the other half over. Press the edges together well with a fork, then deep fry in butter until crisp and golden. Serve warm, with mint chutney or lemon pickle.

GOL GAPPAY (PANI PURI)

Ingredients



  • 1 cup white flour (Maida)

  • 1/2 cup semolina (Sooji)

  • cooking oil (for deep frying)

Ingredients for Dip (Pani)



  • red chili powder (to taste) Bulleted List

  • 1/2 bunch fresh mint leaves (Podina)

  • 1 teaspoon cumin (Zeera)

  • salt (to taste)

  • 1/2 teaspoon black salt (Kaala Namak)

  • 2 glasses water

  • 3 green chilies (Hari Mirch)

  • 1 piece fresh ginger (Adrak)

  • 1 tablespoon tamarind paste (Haldi Paste)

Ingredients for Masala



  • 1/2 cup chickpeas, mashed

  • 1 medium boiled potato, chopped

  • 1 medium green pepper, finely chopped

  • 1/2 teaspoon chili powder

  • 1/2 teaspoon salt

METHOD
1. *Method for Gol gap pay.
2. Mix the white flour and semolina together and knead into hard dough. Set aside.
3. Flatten into a very thin sheet and cut into 2" diameter circles with a cookie cutter. Deep fry in cooking oil until golden.
4. *Method for Dip (pani).
5. Combine all of the ingredients for the dip together in a grinder and grind well. Then strain any liquid from the ground mixture. Set aside the liquid that was strained (do not throw away.) Disregard the strained ingredients.

Tip: To You can either have this dish plain or you can boil chick peas and potatoes (diced in little squares).
And stuff them into the gol gappay. There are several other variations as well. You can also add yogurt and Imli Chutney for better taste.



Method for Masala:.
11. Mix all ingredients together in bowl and serve hot with imli chutney, ketchup or pickles.
12. To eat, punch a hole in the gol gappay, put some juice inside the gol gappay and enjoy

ALOO KE KABAB (POTATO KABAB)

Ingredients



  • 2 kg potatoes (boiled, peeled & grated)

  • 3 teaspoons salt

  • 6 teaspoons red chili powder

  • 8 teaspoons mango powder (amchoor powder)

  • 4 green chilies (chopped)

  • 2 tablespoons mint (chopped)

  • 3 tablespoons coriander (chopped)

  • 1 egg (beaten)

  • 1/2 cup oil (or as desired for frying)


METHOD

1. Put the already boiled & grated potatoes in a big bowl.
2. Add all ingredients except eggs & mix well.
3. Take a small amount of this mixture in the hand and flatten to a disc shape.
4. Dip in beaten eggs & then fry in a pan on medium high heat till they turn golden brown.
5. Serve with ketchup, chutney, raita or as a side dish with anything.

RICE AND CHEESE BALLS

INGREDIENTS
· Rice [boiled and mashed] 1 cup
· Cheese 1/2cup chopped
· Green chili 2
· Dhania 1/4bunch
· Salt 1tsp
· Black pepper 1 tsp
· Maida 1/4cup
· Oil for frying
METHOD
Chop rice in a chopper with cheese, chili, and coriander and take out in a large bowl. Add salt, black pepper Maida and mix well. Make small balls with the mixture and deep fry until golden brown. Serve with sauce and ketchup.

· Chicken 1/4 kg [bone less cut into strips]
· Ginger paste 1 tea spoon
· Garlic paste 1 tea spoon
· Lemon juice 1 tbsp
· Black pepper 1 tea sp
· Salt to taste
· Oil for frying
· Green chili 2 [cut into tiny pieces]
· Coriander 1/4 bunch
METHOD
Place chicken stripes in a bowl. Add all the ingredients except oil and leave it for one hour. Deep fry the stripes [you can also bake them] serve hot with fries and ketchup.
