VEGETABLE STEW

INGREDIENTS
* 2 tbsp olive oil
* 1 garlic clove, minced
* 1 medium onion, chopped
* 1 medium turnip, diced
* 2 carrots, sliced (diagonally or round)
* 1 cup tomatoes chopped
* 1/2 tsp salt
* 1/2 tsp ground cumin
* 1/4 tsp crushed red pepper flakes
* 1 cup chicken broth
* 1 zucchini, sliced round
* 1/2 cup chick peas
* Rice
METHOD
In a large skillet, sauté garlic and onion in hot oil until tender but not brown
Add turnip, carrots, tomatoes, salt, cumin, pepper flakes, and chicken broth
Heat till it boils.
Reduce heat; cover and simmer for 10 minutes or until vegetables are tender but firm.
Add zucchini and chick peas.
Cook until zucchini is just tender.
Serve with rice.
